How to Boil and Egg: Place desired amount of eggs in a pot. Cover with water, bring to a boil on the stove. Let them boil for no more than 1 minute. Remove from heat at let them sit for 10 minutes. Drain water and let eggs cool.

How to Temper an Egg: Crack egg or eggs into small dish and beat gently. Add a small amount of the hot liquid to the egg, and beat viboursly, until the hot liquid has blended in with the egg. This prevents the egg from cooking when you add it to your warm ingredients.

Roux: A roux is basically made my cooking equal parts fat (butter or oil) with equal parts flour. Melt the butter (or heat the oil) in a pan on medium heat. Add flour and don't stop whisking until the mixture is thick. this is the base to gravys and sauces. Add milk or broth and whisk well, eliminating lumps.

How to crack an egg: Yes, there is a "right" way to crack an egg! I used to crack my eggs using the edges of the counter. That's the wrong way! You should crack your egg on a hard, flat surface. This helps you elminate some possible bacteria that may be on the shell, and helps eliminate shells in your egg. When you crack an egg using a corner, the part that you "crack" is pushed into the egg. If you crack an egg on a flat surface, the egg actually cracks, and you can easily break it apart.
