Easy Cinnamon Swirl cake in the crock-pot

I love my slow cooker. I make beans, soups, roasts...but I've never made a dessert in there. Until now. And I must say, I love it!


Ingredients:
1 box cinnamon swirl cake mix
1 can sweet potato puree


Pour whole can of puree into mixing bowl with cake mix.
Mix well. Batter will be thick.


Coat slow cooker in non-stick cooking spray
Pour (and scrape) mixture into slow cooker
Pat down with spoon to make batter even

Pour packet of cinnamon swirl mix into slow cooker to cover.
Stir in circular motion to incorporate cinnamon into the mix.

Bake on LOW heat for 2 or 2 1/2 hours
until toothpick inserted comes out clean.
Turn off slow cooker  
Remove lid, let set for 30 minutes

 
 Plate cake, and enjoy!

Just some notes:

  • I added water to my mix because it felt too thick. The cake was extremely moist, but slightly sticky. I probably won't add water next time.
  • This was delicious, and reminded me of bread pudding. It might be great with a dollop of ice cream!
  • I meant to use pumpkin puree, to give it a pumpkin pie flavor. The sweet potato I accidentally opened tasted great, too.
