Simple Potato Salad
- 6 red potatoes
- 4 hard boiled eggs
- 3 cups creamy dressing
- Bring a small pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain and cool.
- Peel the eggs and cut around the egg white; keep the yolk whole.
- Dice the egg whites and potatoes. Combine in a mixing bowl and add the salad dressing.
- Toss the potatoes and egg; crumble the egg yolk on top and serve chilled.
Mayonnaise and mustard mixture
Bacon ranch dressing (if you add chives you can make a baked potato style salad!)
*I keep my egg yolks with the whites, and dice up the whole hard boiled egg into the salad. For easier slicing and dicing you can use an egg slicer, and use a knife to get the slices into chunks.
**This is a basic recipe and can be seasoned and spruced up to taste with pepper, paprika, pickle relish, olives, curry, bacon or anything else you can think of!
